Spring Has Arrived!!

By Jessica Cooke

It’s Spring, how terrific is that?! We’ve now got Winter behind us and it’s going to be really lovely to watch all the plants and flowers grow and see the days get warmer and brighter. Hope and positivity is in the air, WE CAN DO THIS.

This month we have our Cocktails and Cooking night, an evening of Kundalini Yoga and our #FEELGOOD Virtual Coffee morning with Trish MacHale from Mind and Body Works

This month our cooking challenge is #5ingredientsorless, preparing, cooking and baking dishes all month, that have a maximum of 5 ingredients. The aim of this is to help and encourage all of us to whip up quick snacks and dishes from scratch, even when stuck for time or not in the mood.

I am so proud of this tribe that we have created. You’re working out, eating well, focused on your health, all while in the midst of a Pandemic. I’m so proud of you all, your generosity in the group, how you share ideas and skills. Thank you, I’m so blessed and grateful to be able to work with each of you.

I’ve almost hit the amount of clients I can take on, which means we’ll be operating from a waiting list soon. If you have a friend or loved one who has been meaning to sign up for a while, please let them know this may be their last chance for a while, thank you.

All my love,

Jessica Cooke X

Coaching Program Legend Rosemarie

The first struggle was making the commitment to MYSELF to join this amazing inspirational tribe. (Thank you Jacinta Dalton for the encouragement). As with all endeavours it was a bit daunting in the beginning. The second struggle was getting the step, skipping rope and weights in lockdown 2 with no shops open ( that’s when I joined the group).  Never having done any online fitness classes at home before (bar some video tapes (showing my age now) and DVD’s when I had babies and smallish at home ) I didn’t know if I could make it work for me and now I look forward to the classes was part of my Monday to Friday routine.

I would say I am definitely feeling fitter, stronger physically and calmer in myself. The structure and endorphins have really helped me cope with all the stress and negativity that this pandemic has landed on our doorsteps.

The biggest change to my life has been a consistent start to my day with the workouts and the individual and group coaching has been wonderful. Jessica is a truly inspirational person and coach and always has a smile on her face and “sure it's only 30 minutes".

I love exercise and the way it  makes me feel and always have tbh. So my focus need to be on my food etc which I find difficult with a houseful of men !!! But I’m so glad I found this and I see it being part of my life from now on hopefully.

Client Inspiration: Joanna Fitzpatrick

Coaching Program Legend Joanna

Hello everyone - my name is Joanna Fitzpatrick and I have been with Inspire Fitness for 5 years. Inspire fitness has changed my eating habits, exercise ability and attitude forever in such a positive way.

Once Covid hit , I did have initial reservations about doing the Online programme but I have to say it has been brilliant and kept me sane, especially during the first lockdown and the home schooling of 4 children!!!

With my second child's confirmation coming up ( which was cancelled 3 times!) this has helped to give me motivation along the way also with Jessica's wonderful coaching and encouragement to get into a suit for the day- which I did today!!

Big changes that have really helped are no carbs after 5, doing 3-5 sessions a week and the encouragement and training online.

I love Inspire Fitness and all the encouragement you get from the wonderful women who train - . I couldn't do without it.

Happy Birthday!

Recipe of the Month: Veggie Burgers

Easy to make, simple and really tasty, these veggie burgers use ingredients you’ll find in your cupboards. They go great with a baked potato, salad or lots of vegetables.

Delicious Veggie Burgers

Ingredients:

  • 1 tbsp olive oil
  • 1 can of black beans, drained and rinsed
  • ⅓ cup + 1 tablespoon rolled oats
  • 1 large shallot, roughly chopped (or ½ medium onion)
  • 2 cloves garlic, roughly chopped
  • Salt & Pepper to season (the beans take more salt than you may expect)

Method:

In the bowl of a food processor, add in all of the ingredients and process for 15 to 20 seconds, or until the mixture begins to come together, scraping the sides as needed. Scrape all of the mixture into a small bowl and place the bowl into the refrigerator for 30 minutes to set. Preheat oven to 400°. Line a baking sheet and set aside. Remove the bowl from the fridge. Scoop out ½ cup sized scoops from the mixture and using wet hands, form the mixture into patties.  Place the patties onto the prepared baking sheet and place them into the oven for 15 minutes. Flip the patties over and then bake for an additional 10 minutes or until the patties are browned and feel solid.
